Reform of value standards for agricultural products

What are high quality produce?

I always hear a lot of people.

They answer taste, aroma, color, shape, nutrients, freshness, etc. with an embarrassed face.

What are the criteria for value to choose?

The answer is freshness, color, shape, size, weight, and maybe organic vegetables.

Surprisingly, all the answers are ambiguous.

The quality of vegetables is made up of various factors, but it is generally displayed as follows.

-Vegetable quality factors-

Appearance (color, shape, size)

Taste (taste, aroma, texture)

Nutrition (vitamins, minerals, dietary fiber, etc.)

Safety (pesticides, chemicals)

I add a phytonutrient point of view to these and explain as follows.

-Functional element-

Soil condition (mineral type, microbial activity, soil quality, humus mass, carbon content)

Growing environment (quality of fertilizer, use of pesticides, amount of nitrate nitrogen, sunlight, water)

Nutrients (proteins, sugars, fats, minerals, dietary fiber, taste)

Plant nutrients (phytochemicals = ingredients such as polyphenols including pigments, tastes, and aromas)

Degree of freshness retention (higher content of nutrients and phytonutrients, less nitrate nitrogen is better)

Safety (content of pesticides and chemical substances)

Freshness (freshness retention x number of days after harvest)

In other words, all the elements of functionality lead to freshness retention.

Quality depends on functionality and freshness retention.

We all want to feel the taste, aroma and texture and enjoy our meals.

We all have to get nutrition from food to sustain our lives.

We also have to take functional ingredients from our diet to prevent illness and repair the modulation of the body’s physiology.

We need agricultural products that are highly functional and retain freshness.

Mere “freshness” is meaningless. Freshness and functionality are completely different.

There should be a value standard here.

We must not only eliminate malnutrition in the world through food production, but also reduce the social cost of medical expenses.

We need to pursue the functionality of agricultural products.

It seems that the introduction of traceability is progressing for food safety.

However, traceability is not a direct measure for food safety management, it does not guarantee quality, nor can it scientifically confirm safety. Traceability cannot prevent 100% of health hazards and human malice. All you can do is investigate the cause and quickly identify the problem area, and it is just a “mechanism” for grasping the movement of food. Naturally, traceability is not guaranteed for functionality at all.

Traceability is not working well in our society.

The reason is that traceability does not provide valuable information. The functionality required by food security is valuable information that is a different dimension than mere safety.

We redefine quality by “freshness retention” and spread awareness of the functionality required for food in pursuit of food functionality, and we will introduce a Safety Chain system using blockchain in order to guarantee them.
